Zupa rybna z krewetkami, porem i ziemniakami

Cod soup with prawns, potato and leek




Zupa, którą śmiało można przygotować na Wigilijny stół. Jest bardzo bogata, pełna, sycąca i przepyszna. Będzie to miła odmiana od tradycyjnej, polskiej zupy rybnej. Zawiera filety dorsza, krewetki i wędzonego łososia. Przepis pochodzi stąd
 
  • 2 filety białej ryby
  • 1 liść laurowy, 1 ziarno ziela angielskiego
  • 5 szklanek wody
  • 1 duży por, biała i jasno zielona część
  • 30 g masła
  • 1 łyżeczka musztardy dijon
  • 4 ziemniaki, obrane i pokrojone w małe kostki
  • ok 1 łyżeczki soli (ostrożnie z ilością, lepiej dodać najpierw część i spróbować po dodaniu wędzonego łososia)
  • 120 g krewetek atlantyckich, mrożonych, ugotowanych
  • 1 łyżeczka suszonego tymianku
  • 80-100 g wędzonego łososia
  • 2 łyżki posiekanego szczypiorku
  • 3 łyżki śmietany crème fraîche 
  • szczypta białego pieprzu do smaku

  1. Zagotuj liście laurowe i ziele angielskie w wodzie. Dodaj pokrojone filety ryby. Doprowadź do wrzenia i wyjmij rybę. Odstaw bulion na później. 
  2. W drugim garnku podsmaż pora na maśle. Dodaj pokrojone ziemniaki i smaż jeszcze jakieś 5 minut (w sumie 20 minut). Dodaj musztardę, pół łyżeczki soli, tymianek i zalej wywarem rybnym. Gotuj aż warzywa będą miękkie.  
  3. Wyjmij liść laurowy, połowę ziemniaków i pora a resztę zupy utrzyj na krem. Dodaj rozmrożone krewetki, wyjęte warzywa i zagotuj. Dodaj śmietanę (najlepiej rozmieszaj ją najpierw w odrobinie gorącej zupy i taką dolej). Dodaj łososia, filety rybne, szczypiorek, pieprz i sól do smaku. Odstaw, aby zupa zyskała aromatu i zgęstniała.  
  4. Posyp odrobiną szczypiorku przed podaniem.

On a traditional, Polish Christmas dinner we don’t eat meat but fish instead. A lot of fish! Different types of fish made in number of ways. One of the most popular is fish soup, which is made from carp. To be more precise from their heads. You buy it alive, keep in in your bath until needed (so you can’t buy it too early) and then a brave member of your family needs to kill it.
My fish soup is not exactly what you would find on polish table because it is made of cod, salmon and prawns. It is reach, full of flavors and I would call it Polish/Irish Christmas soup. It brings a bit of modernity into a traditional dish. Fish soup is not my favorite dish on Christmas table but this one changes my mind.

  • 2 Cod fillets 250 g
  • 1 bay leaf and 1 pimento
  • 5 glasses of water
  • 1 large leek (white and light green part only)
  • 30 g of butter
  • 4 potato, cut in small squares 
  • 1 tbsp of mustard, such as Dijon
  • 1 tsp of salt, or to taste
  • 120 g of large north Atlantic prawns
  • 1 tsp of thyme
  • 80-100 g of smoked Norwegian salmon
  • 2 tbsp of spring onions, chopped
  • 3 tbsp of crème fraîche 
  • white pepper to taste
  1. Put bay leaf and pimento into a water. Bring it to boil and add cod fish cut in a large pieces. Boil for 1 minute and take out the fish. 
  2. In a second pot melt butter and add the chopped leek. Stir well, then cover and sweat for 10 minutes. Add potatoes and fry for further 10 minutes. Pure the fish stock, add mustard, salt, thyme and cook until vegetable start to soften. Take half of the cooked vegetables and bay leaf out of the pot and blitz the soup with a hand blender until smooth. Put beck rest of the potato and leek. Stir in half the crème fraîche. 
  3. Defrost prawns on a sieve under a running, warm, tap water. Add them to the soup. Cook for one minute.  Add salmon, cod fillets, spring onions, and pepper. Leave it for an hour as the tastes will came out nicely and the soup will get thicker. 
  4. Serve with garnish of fresh spring onions.
